Kyoto is well-known for its tofu dishes, and there are many *expensive* and *luxurious* tofu restaurants in the city:o
Today’s mapo dinner

I know, this picture isn’t very attractive, but this was my dinner last night and it was very good!
It’s Tomato somen.
Somen is very thin noodles made of flour, which is in a way similar to udon, but the texture is quite different because of its thinness. It’s normally the food for hot season, when you don’t feel like eating hot rice.
there you can see the tofu I posted this morning. I topped it with bonito shaves and ponzu before serving.

I made the sauce with instant dashi. Boil it and thicken it with a little bit of starch+water.
In the picture, the dashi bottle is the one of soy sauce+seaweed broth, but later I switched it to the one of salt+seaweed broth. That’s why the served tofu is very light color - no soy sauce.
But if the making sauce bothers you, I recommend ponzu+grated ginger.
It’s super easy as far as ponzu is available somewhere.
Only one tip for this cooking is that you drain the tofu in advance - for about 2-3hours, or microwave for some minutes. And no make haste in frying. It takes more than five minutes to make the surface crispy.
Many people pull up the tofu from the oil too quickly and in the consequence the tofu gets very oily….
